As the ambassador of the Slow Food movement in the UK, Richard`s restaurants champion the ideas behind Slow Food cooking, sustainable foods and forgotten foods. Many foods have been wiped off the favourites lists due to their commercial viability, this is our class on how to source and cook great forgotten produce. This course also involves a garden walk and talk from our head gardener, Dermot Carey.

CHRISTMAS CARVERY SKILLS
This is a skill that is developed with practice however as the Christmas season approaches we are running a professional carving skills master class followed by a talk and a tasting of the meats and birds.
